There is no easy way. Do it by hand. "Elbow grease".
You can try using old hack saw blades to stab away at the rust, because they are nice and flexible. Your roof did look like it had alot of rust damage, but its up to you if you think you can save it.

Today there was so much condensation on the underside of my roof it was soaked. That is what causes this in these old trucks.

As soon as I sand it, the rust come off and I find solid metal. My two concerns are those "cracks" and the bowing of the roof in a few places. As heavy as the rust looks, I'm not seeing any rot. But I'm no Earl Schieb.

If what I see is the cracks you are talking about, that is rot(rust through) that will have to be cut out. Unless you are talking about another area I didn't see,
